Stir Fried Black Rice
Course: Dinner, Main Course
1 size 7 egg
2 tablespoons minced fresh ginger
400 grams of chopped Christmas ham OR Canned tuna
2 cloves garlic, minced
Half onion chopped
3 scallions, thinly sliced (white and green parts separated)
3 cups of mix veggies
1 chopped carrot
1 yellow or red capsicum
2 cups cooked Thai black Cargo rice (1 cup dry)
2 tablespoon low-sodium light soy sauce
2 tablespoons fresh lime juice
  1. Preheat a wok over medium-high heat for 1 minute.

  2. Add oil and swirl to coat.

  3. Season garlic and onion until golden brown.

  4. Add ham or tuna.

  5. Add mix veggies and carrot stirring, until is tender, about 3 minutes.

  6. Mix in rice. Once heated through, add eggs and light soy sauce.

  7. Remove from heat; stir in lime juice. Garnish with scallion greens and capsicum.
